For Every NRI Who Misses the Smell of Amma's Kitchen
If you've lived abroad for any length of time, you know the feeling. You walk into an Indian grocery store in London, Toronto, or Houston, pick up a packet of chilli powder or garam masala, bring it home — and it's just not right. The colour is off. The aroma is flat. The flavour doesn't bloom the way it does back home.
It's not your cooking. It's the spices.
The masalas sold in Indian grocery stores abroad have often sat in warehouses for months, been sourced from the lowest-cost suppliers, and frequently contain fillers and artificial colours added to disguise the staleness. What you're missing isn't just taste — it's freshness, purity, and provenance.
Why Hyderabad Masalas Are Different
Hyderabad has been a centre of spice trade for over 400 years. The Charminar's Laad Bazaar, the old city's spice markets, and direct access to Telangana's farming belt all create an ecosystem where quality natural spices are still the norm, not a premium exception.
The Guntur–Warangal–Nizamabad triangle produces three of India's most prized spices:
- Guntur chillies: World-famous for their balance of heat, colour, and flavour — the variety used in Hyderabad's finest biryanis and curry pastes
- Nizamabad turmeric: Higher curcumin content than generic turmeric, deeper yellow, more pronounced earthy aroma
- Warangal coriander: Distinctly aromatic, warm and citrusy — nothing like the bland, odourless powder sold in most supermarkets
These are the spices that professional chefs in Hyderabad use. These are what made Hyderabadi cuisine world-famous. And until recently, accessing them from outside India meant depending on someone to carry packets in their luggage.
What "Natural" Actually Means — and Why It Matters
When Myaamee's Masalas says our products are natural and chemical-free, it means very specific things:
- No artificial colours: The red in our chilli powder comes from Guntur and Byadagi chillies — not Sudan Red or Rhodamine B (both of which are banned food dyes still found in cheaper brands)
- No anti-caking agents: We don't add silicon dioxide or sodium aluminosilicate to prevent clumping — proper drying handles this naturally
- No preservatives: Airtight packaging and proper moisture control preserve our spices without chemicals
- No fillers: No chalk powder, rice flour, or other bulking agents — every gram you buy is the spice itself
- No synthetic flavour enhancers: The flavour comes from the spice, the soil it grew in, and how it was processed
How to Identify Genuine Spices: A Practical Guide
Whether you're shopping in Hyderabad before flying out or asking family to send a parcel, here's how to tell real from fake:
The Aroma Test
Open a packet of genuine, freshly processed turmeric and the earthy, slightly peppery aroma should hit you immediately. If a turmeric powder has little to no smell, it's either old, over-processed, or adulterated. The same applies to coriander (should smell warm and citrusy), cumin (earthy and slightly bitter), and cardamom (intensely floral).
The Colour Check
Pure turmeric dissolved in water should turn a rich golden yellow. If chilli powder leaves an unnaturally vivid, almost neon red residue that doesn't fade, that's almost certainly artificial colouring. Genuine chilli powder has a rich, slightly muted red — beautiful, but not electric.
The Texture Feel
Freshly processed spices have a slightly irregular, coarser texture. They may clump lightly in humidity — that's normal, and actually a good sign. The absence of anti-caking agents means the powder behaves more naturally, even if it doesn't pour as freely as factory-processed alternatives.
What NRIs Are Stocking Up On
Based on what our customers most often request before their trips abroad or ask family members to send, here are the most popular picks:
- The biryani kit: Whole garam masala (cardamom, cloves, cinnamon, star anise, bay leaf), Guntur chilli powder, pure turmeric — everything you need to make a biryani that tastes genuinely Hyderabadi
- The everyday cooking set: Coriander powder, cumin powder, turmeric powder, and a quality garam masala blend — the four essentials for most Indian cooking
- Health-first picks: High-curcumin turmeric 500g (for golden milk and cooking), whole black pepper, green cardamom — all chosen for their health properties as much as their flavour
Our airtight packaging preserves freshness for up to 18 months, making it practical to bring back a generous supply.
